ALL HAIL CAESAR!
Let this recipe kick off the first of THREE Caesar recipes on Laughter and Lemonade! Caesar salad is one of my all time favorite foods, so I have three Caesars coming your way, starting with this Blackened Salmon Caesar.

When I’m busy and I still want a healthy dinner, I love making Blackened Salmon Caesar because it doesn’t require too much cleanup but it’s still healthy, quick to prepare if I’m starving, flavorful and satisfying.

On another note, because diet and overall wellbeing go hand-in-hand so well, I thought I’d share something about STRESS I learned today! Â I’m currently doing my outpatient rotation (for my dietetic internship) and today one of the nurses brought back a handout from a speaker she attended last night. Â The speaker was LeAnn Thieman, a nurse and the author of the Chicken Soup for the Soul for Nurses books. Â She shared a cool handout on stress I wanted to share with you.
We may say we’re stressed all the time. Â But what does stress actually look like? Â How does it manifest in us?
Symptoms of Stress:
- Physical
- appetite changes
- headaches
- fatigue
- poor sleeping
- increased alcohol consumption
- frequent illness
- digestive problems
- pounding heart
- teeth grinding
- rash
- restlessness
- foot-tapping
- finger drumming
- smoking
- Mental
- forgetfulness
- poor concentration
- dull senses
- lethargy
- boredom
- low productivity
- negative attitude
- anxiety
- the “blues”
- mood swings
- anger
- bad dreams
- irritability
- crying spells
- nervous laughter
- loss of loving feeling
- Spiritual
- emptiness
- loss of meaning
- doubt
- martyrdom
- loss of direction
- cynicism
- apathy
- abandonment
- worry
- isolation
- distrust
- “no one cares”
How many of these symptoms do you have?  And how can you manage or deal with stress?? ‘Cause we can’t avoid it entirely.  I’ll share my thoughts and what I know in the next post, but what about you?  Are you surprised by any of these symptoms? AND DON’T YOU LOVE CAESAR SALAD TOO?? Â DON’T YOU??
- 1 tablespoon coconut oil (or your oil of choice)
- 2 salmon filets (we usually get about 5-6 oz filets)
- 2-3 teaspoons Blackened Seasoning Blend
- 1 large or two small heads of romaine lettuce, chopped
- Caesar Lover's Salad Dressing, to taste
- parmesan cheese (for the top)
- salt and pepper, to taste
- Make sure your salmon fillets are patted dry. Apply the seasoning blend evenly to the flesh-side (not the skin-side) of the salmon.
- Heat up your fat of choice in a sauté pan over medium heat.
- Place the salmon seasoned-side down in the hot pan and do not move it around or flip it until 3-5 minutes have passed. (May be more or less depending on how thick your filet is.)
- Flip and cook 3-5 more minutes, until the center still appears slightly pink.
- While the salmon is cooking, in a large bowl combine romaine, caesar dressing, salt and pepper. Toss to combine. (If I have time I even plate the salad, top it with parmesan and clean up! So after dinner all I have left to do is clean the pan I cooked the salmon in, and toss our plates into the dishwasher!)
- Plate your salad, add parmesan, and top with the salmon. ALL HAIL CAESAR.

Yes!! You noticed Nana’s bowl!! 🙂 It’s so pretty. Nick will love you if you make Caesar! Although it is salmon on top, again… but it’s prepared a new way! That kid doesn’t know how lucky he has it to be eating that good salmon so often. I’m sure you could bake the salmon as well since I know you don’t want to get your cook top splattered with oil 😉 Let me know when you make it!
