Chicken. Marsala. Oh, heck yes. I love chicken marsala. Seriously, one of my favorite flavors of all time. Oh man. Umm, the best. Yikes, I need to watch it or this could starting to sound like a line from Fifty Shades of Grey, all this oooh-ing and aaah-ing.
Which, by the way, I haven’t heard anything about the movie? Has anyone seen it yet?? Or are you all too hesitant to watch it in the theater. Waiting for the DVD, eh? I couldn’t even finish the book. Well, technically I didn’t read it, I tried to listen to it on tape. Even though it was on my iPhone. You know what I mean. Either way, that was my first mistake. I used to drive hours upon hours each day when I was working for The Big Food Company in retail. So one day I decided instead of always listening to my favorite explicit rap music and top 40 hits, I should try to “read” some more books. AKA get into books “on tape”. (Someone’s really gotta fix that phrase).
Well I had been hearing a ton about these Fifty Shades of Grey books from various friends, family members, and a coworker so I thought hey, I should start with that! Big mistake. Big. Huge. First of all, do not listen to a nearly pornographic book on tape. Second, don’t listen to that ish in the middle of your workday. Not when you’re between meetings and calls. Inappropriate. Awkward. Straight up bad. Hadn’t I heard not to mix business and pleasure?? Third, it’s one lady reading the book doing voices. And I’m sorry whoever you are, but I did not enjoy your voices, lady. I’m positive I could not have done it better; I don’t know if someone could have actually, but the voices were just terrible and I could not get past them. What lady sounds good emulating a deep man-voice anyway? Let alone one trying to be seductive. So anyway, yeah. Never made it through the first book. Kinda curious about the movie. Maybe.
What were we cooking? Oh yes, chicken marsala. You guys. This is one of my favorites. Dan literally asked me to make this again this weekend just for leftovers so he can pack it for his lunch everyday. I’m not sad about that. I take it as a big compliment! We ate it with a simple arugula salad and a Parm & Parsley Spaghetti Squash dish I’ll be sharing later this week. I wish every meal I made was this good.
Oh, and if you can’t get enough Jimmy Fallon like me, here’s another hilarious clip of him and Dakota Johnson (who plays Anastasia Steele in Fifty Shades) making anything sexy. (And in case you missed the first clip, here ya go again.)
- 1 lb boneless skinless chicken thighs
- 2 tablespoons ghee or butter
- salt and pepper
- 1 shallot, diced
- 12 ounces cremini mushrooms, sliced
- 1 cup marsala wine
- ½ cup chicken broth
- 4 ounces mascarpone cheese
- 2 tablespoons fresh parsley, chopped
- Heat a large skillet to medium heat. Meanwhile, pat your chicken thighs dry with a towel or paper towel, then season both sides with salt and pepper.
- Add chicken in pan and cook for 10-12 minutes. Then flip and cook about 3-5 minutes, until just cooked through. Remove chicken from pan, set aside.
- Add shallot and mushrooms to the pan. Season with salt and pepper. Cook about 8-10 minutes until mushrooms fully cooked.
- Add marsala wine and broth. Scrape the bottom of the pan to release the brown bits. Add chicken back to the pan. Bring to a simmer and cook 5 minutes.
- Turn off the heat. Stir in the mascarpone and parsley. Serve!
