With Valentine’s day on Friday, I’m declaring this week at Paleo Paisan Chocolate Week. Three recipes this week… all with chocolate.
To start us off, I have my Fudgy Brownie Bites. These puppies are flourless! By flourless, I mean totally flourless: since we’re talking paleo, obviously no wheat flour, but also no almond flour and no coconut flour!
These do have coconut sugar in them which is debatably paleo (hence why paleo versions of desserts are still desserts, so no free passes people). It’s debatable because it’s still sugar. If you’re loading things up with tons of sugar, is that really focusing your diet on whole nutrient-rich foods like proteins and vegetables? No. But as you know, I don’t go crazy with cups and cups of sugar, and I believe we do need a balanced place for sweets and treats in our diets! So get baking!
I did try variations of this recipe with dates for sweetness instead of the coconut sugar, but they did not turn out nearly as well; they were dry and bland. I didn’t try honey or maple syrup but if you do, let me know how they turn out!
These Fudgy Brownie Bites are just that; fudgy, decadent and rich without being overly sweet. You only need a few bites for pure bliss. We surprisingly preferred the taste of them the next day to just out of the oven. They tasted sweeter and almost richer.

- 1½ sticks (or 12 tablespoons) butter
- 10 ounces dark chocolate
- 6 large eggs
- ¾ cup coconut sugar
- 1 teaspoon vanilla extract
- ½ cup cocoa powder
- pinch of salt
- Preheat oven to 350.
- Line a 9 in. x 9 in. brownie pan with parchment paper.
- In a double boiler, melt the butter and chocolate. Set aside to cool slightly.
- In a standing mixer or using a hand mixer, beat eggs and sugar together for about 5 minutes, until at least doubled in volume. Add the vanilla.
- Whisk cocoa powder and salt into melted chocolate mixture.
- Slowly beat chocolate mixture into egg mixture until combined.
- Pour into prepared pan and bake for 25-30 minutes.
- Allow to cool, then slice into your desired size. I sliced mine into 4 rows and then small brownies from there, about 28 total.

Alicia–are you using unsweetened baking chocolate, chocolate disks (like we use for making pretzels), or something else? These look super easy and decadent!!

Any dark chocolate will work. I used a chocolate bar from the grocery, but those disks would be perfect!
