Buttered Green Beans & Carrots

Kale Chopped Salad
I used to HATE kale in salads. I thought kale was too tough, too chewy, too grassy. I think I had some bad ones. Someone else I was with ordered on in a restaurant one time and when I tried it I was pleasantly surprised! It was tender. I wasn't chewing and chewing the same bite feeling like a grass-grazing cow. Sometimes there's a benefit to my need for background noise. Fresh Tomato Sauce
This is my favorite way to make fresh tomato sauce. The flavors are incredible: sweet, savory, umami (yes, tomatoes have umami!), fresh, Italian, summery. You start by roasting the tomatoes in the oven which makes them sweet. Because of this, you you can actually make this sauce year-round, even when tomatoes aren't sweet or in season.
