Wanna know what lesson I most recently learned? Take more videos! I learned this for the first time when I studied abroad in Australia. Somehow, I forgot. I lived there with two awesome ladies, Lauren & Melissa. I think it was Lauren who said, "we must take videos", and she was right. The videos are so much more fun to watch after the fact than looking at the pictures!! Hearing people's voices, hearing the way they say things, seeing … [Read more...]
Could cooking rice differently be our answer to obesity?
Articles were published yesterday across many news platforms sharing the latest research where scientists figured out a simple way to cook rice that dramatically cut the calories. (Here's a link to one of them.) Their basic idea is that if you cook rice with a little coconut oil (or any medium-chain triglyceride [MCT] oil) then cool it down, it forms resistant starches. Resistant starches are not normally the type of carbohydrate found in … [Read more...]
Roasted Eggplant with Miso Dressing
This is one of my favorite creations as of late. I've made it time and time again. Mostly because my husband claimed he didn't like eggplant... until this dish. Do you ever feel like you make the same things over and over? Or at least you cook with the same flavors over and over? I sure do. This is such a simple dish, only 5 ingredients (minus oil, salt and pepper) and bursting with different flavors. At least they're different than my … [Read more...]
Closing the Chapter on Paleo Paisan & Top 10
Note: You've been warned. This is a long post. I feel an explanation of the changes coming is due, but if you'd like to just skip to the Top 10 you can do so by clicking here. As you know, last month I announced that I was going to be making some changes to my blog. Enter transition phase. Hello, nice to meet you. While I updated my about and about me pages with my new perspective, they're more top-line summaries of what I want to … [Read more...]
Peanut Butter Chip & Chocolate Chunk Cookies
Ooooh these cookies. They have almost become known as "THE Cookies" over the years. They are by far one of the best cookies I've ever eaten. The name of them is quite long, so maybe the nickname The Cookies works out well. Or PB-3C Cookies? I don't know that might sound a little too much like "PVC pipe" to me. Or maybe I've just been spending too much time doing Crossfit. Over Valentine's/President's Day weekend we had some friends coming to … [Read more...]
Comfy Cozy Chili
How does a comforting bowl of chili that you can make in 35 minutes or less sound? A good chili recipe is something I feel like everyone needs in their culinary arsenal. As I mentioned in my White Turkey Chili with Mushrooms post, I always associate chili with Halloween because my mom always makes chili on Halloween every year. … [Read more...]
Shredded Chicken & Tomatillo Stew
This dish uses cilantro. Let's talk about that for a second. I used to hate cilantro. Yuck. To me, it tasted like the smell of dirty socks, sweaty armpits, or B.O. (B.O.... always makes me think of this Seinfeld.) But it kept showing up in little bits in my food. A little in salsa, and I love salsa. A little in my guacamole, and I love guac. A little in some Thai food, and holy crap I love Thai food. Now, suddenly, I don't loathe … [Read more...]
Sweet Potato Spaghetti Bolognese
I went out to eat a few weekends ago to a local Durango spot. The husband and I had a little date night. Gotta keep things romantic, ya know? It was probably my favorite meal/restaurant we've had in town yet! He started with a whiskey cocktail, me with sparkling rosé, and we kicked the night off right with some oysters. Gosh, I love those things. The first time I ever had one … [Read more...]
Caesar Lover’s Salad Dressing
When I really like a food, I latch onto it for a while. I eat it all the time, as if I have blinders on and I don't see other things on the menu or in my fridge. Caesar salad is the perfect example of this. I've always loved it and I always ordered it in restaurants growing up. The two restaurants that served my favorites were Figlio and Lindey's. Figlio's was more of a vinaigrette type dressing, had nice thick grated parm, and good … [Read more...]
Parm & Parsley Spaghetti Squash
Parmesan and parsley reminds me of my mom :). She used to make me mac and cheese every day. By every day I mean every day from preschool through high school. I take that back, she didn't make it every day. It's one of the first things she taught me to cook when I was seven years old so she didn't have to do it ev-er-y-day. And I'll get into that recipe more someday, but for now I bring it up because every once in a while I'd want it just a … [Read more...]
