Blackening proteins is a great way to add flavor in a quick, easy way.  Mix up a batch of Blackened Seasoning Blend, keep it in the pantry, and pull it out for a quick, flavorful meal.  I usually use this blend on salmon, but I had some cod in the freezer from when Dan and I stocked up at Costco.  This Quick Blackened Cod is pictured above with Wintertime Clementine Salsa over top.  You can serve it plain, over a salad or as shown above.  Any way you do it, enjoy and happy cooking!
Quick Blackened Cod

Ingredients
- 2 cod fillets, about 6 oz. each
- 1 tablespoon Blackened Seasoning Blend
- 1 tablespoon coconut oil (or other fat)
Instructions
- Make sure your cod fillets are patted dry, especially if they were previously frozen and thawed.
- Apply 1 teaspoon of Blackened Seasoning per 4 oz. of raw protein. Pat seasoning on evenly to one side of the protein.
- Heat up your fat of choice in a sauté pan over medium heat.
- Place the protein seasoned-side down in the hot pan and do not move it around or flip it until 3-4 minutes have passed.
- Flip and cook 1-2 more minutes.

My phone won’t let me click the 5th star but this was BEYOND 5 star. I grilled the cod with the seasoning and served it over a homemade salsa and lettuce. Delicious!!!!!
